I haven't used an iPhone in many many years, so I have no idea how to disable that (it you can) but I do know a good workaround:
If the site you're uploading from is on the whitelist, try uploading by URL instead, e621 will grab the file straight from the server instead of having to download it first.
If it's not on the whitelist you can request it be added at topic #22269 (but that can take a good while for anybody to do it)

You can find some useful info here

Are you taking from orig or just large? and twitter usually compresses stuff. url uploading is the best way to guarantee the best quality since it'll give warnings if there's any issues
source:*twimg*large* has quite a number of posts, huh

As an iPhone user myself, don't bother. If you can't get the direct image links from X/Twitter, you are potentially uploading lower quality downloads from your phone.
Direct image links is key to getting the "best" quality from X uploaded onto e621 (refer to @SNPtheCat's comment).
However, on iOS, it is probably impossible to grab it straight from the X app and you would probably need to use some sort of third-party app to get it.
It would just be best to upload from a PC, where browser extensions and/or userscripts will get you those without any hassle.
Otherwise, the next possible option is to get the original image itself from the artist and upload that.

It's not bluesky which requires you to jump through so many damn hoops, it's twitter where you can get the direct image link by getting the download link and changing the size to orig

change the &name= bit at the end of the URL to say &name=orig
To preempt another question, if it fails to upload despite there being no warnings before, keep hitting upload until it works (the duplicate protection will help you here). This is an issue on twitters end and not e6
