Recently, I've noticed that e621 appears to be more reliable and efficient than FA. That has me curious about the server architecture underneath. It's simple to find information about FA's architecture because it's been well documented. Unfortunately, a quick Google search and reading a few wiki articles didn't make me any more knowledgeable about the e621 side of things. Is the server side of e621 public knowledge? If so, I'd like to read about it.

If I recall correctly, we are basically piggybacking off Bad Dragon's servers alongside with F-list.
I believe server maintenance and upgrades are managed by staff members who also are admins on e621.

IIRC E621 is hosted from Arizona, if that matters.

I have no idea about the hardware side of things but maybe you'll find the tech stack interesting https://github.com/zwagoth/e621ng/blob/master/docker-compose.yml. It's open-source, take a look around if you want.

E6 doesn't use docker in production (and wouldn't use this dev-specific one anyways) but the general idea should be the same, just distributed across multiple servers.
