Basically I know that you can fav:[yourid], do stuff like order:score and look through the tags; but is there a way to see any tags fast, that are uncommon in nature and that you generally like? For example, you almost always see the obvious / most common tags first if you have a lot of favourites; e.g. male/female, penetration or anything similar.

i'm afraid i don't know any way to query tags by favourites.

it also doesn't sound like a straightforward query,
getting all general tags present in your favourites isn't a big deal,
but then there's two metrics to weigh-up: how often the tag appears among your favourites ('you generally like') and how often the tag appears among all posts ('uncommon in nature')

e621's search engine and database isn't really suited for performing such deep analytics.
your best option would be to download the metadata of all your favourites (/posts.json?tags=fav%3AZoroDesu), import them into your own database and run whatever analysis you need
